Recipies at Potluck

When I was at the potluck dinner Friday night, I couldn't talk but for moaning how wonderful all that food was. So how 'bout it? Let's have some recipies come forward. I know Sandpiper asked me if I knew who did that pot roast. I didn't have a clue, but how about the recipie? It would be nice to know who made what. So, I guess I'll start.

Blackberry Cobbler
 
2 cans Blackberry Pie Filling
1 box white cake mix
1 stick of butter (cut up)
 
Pour the blackberry pie filling into a pan
Pour the white cake mix on top
Sprinkle cut up butter pats on top
Bake at 350* for 45 minutes until top browned
 
Okay, now it's somebody else's turn.

Okay, the recipe for Orange Salad is so simple:

1 large container of cottage cheese(I used low fat)
1 large jello(I like the sugar free) (I used orange, but you can change this recipe easily by changing the jello flavor and fruit)
1 tub cool whip (I like the lite)
1 can fruit (I used mandarin oranges.see note above)
½ to 1 cup of chopped nuts.(I like pecans)

So you can pretty much just stir things together in this order and you have a cool salad. I am making it in cherry for the 4th.

Chocolate Eclair Cake

 

1 large box (6oz) of INSTANT vanilla pudding OR two small boxes. 

1 package of graham crackers

1 tub of whipped topping, such as Cool Whip, thawed.

1 can of chocolate cake icing.

 

Make instant pudding.  Fold in whipped topping, set aside.

 

Line 9x12 pan (or 2 8in square pan) with 1 layer of graham crackers.

Spoon 1/2 of the pudding mixture over the graham crackers.

 

Place another layer of graham crackers in the pan and cover with the remaining pudding mixture.

 

Take the chocolate cake icing and spead it onto the final layer of graham crackers and then

place the graham crackers onto the pudding layer.

 

Cover and refridgerate at least 8 hours.  Overnight works best.

 

Notes:

 

I have used regular vanilla instant pudding as well as french vanilla instant pudding and it comes out great with either one.

I prefer chocolate fudge icing as opposed to milk chocolate but you can select whatever you prefer.

This recipe could be altered...you could use other pudding flavors as well as other graham crackers..cinnamon or chocolate graham crackers.

Pie Pod, I remember that cake.  Yummy.

 
Chocolate oreo pie
 
Put 1 1/2 cups of mini marshmallows with 2 tbs mix and put in microwave for medium for 20 seconds.  They will be partially melted.  Place in refrigerator for 10 to 15 minutes to cool while preparing the rest.
 
Mix two boxes instant chocolate pudding mix with two cups milk.   Let set for 5 minutes.  Stir in  1 1/2 cups Cool Whip.   Poor into a chocolate cookie pie crust.
 
Place one layer of oreo cookies---I like the chocolate filling ones or the double stuff ones. 
 
Mix 1 1/2 cups of Cool Whip into the marshmallow mix and then top pie.  
 
Is better once the cookies have softened a little.

Ingredients

  • 2  tablespoons  canola oil, divided
  • 1  tablespoon  butter, divided
  • 1/4  cup  all-purpose flour
  • 2  pounds  boneless chuck roast, trimmed and cut into 1-inch cubes
  • 1  teaspoon  salt, divided
  • 5  cups  chopped onion (about 3 onions)
  • 1  tablespoon  tomato paste
  • 4  cups  fat-free, less-sodium beef broth
  • 1  (11.2-ounce) bottle Guinness Draught
  • 1  tablespoon  raisins
  • 1  teaspoon  caraway seeds
  • 1/2  teaspoon  black pepper
  • 1 1/2  cups  (1/2-inch-thick) diagonal slices carrot (about 8 ounces)
  • 1 1/2  cups  (1/2-inch-thick) diagonal slices parsnip (about 8 ounces)
  • 1  cup  (1/2-inch) cubed peeled turnip (about 8 ounces)
  • 2  tablespoons  finely chopped fresh flat-leaf parsley

Preparation

1. Heat 1 tablespoon oil in a Dutch oven over medium-high heat. Add 1 1/2 teaspoons butter to pan. Place flour in a shallow dish. Sprinkle beef with 1/2 teaspoon salt; dredge beef in flour. Add half of beef to pan; cook 5 minutes, turning to brown on all sides. Remove beef from pan with a slotted spoon. Repeat procedure with remaining 1 tablespoon oil, 1 1/2 teaspoons butter, and beef.

2. Add onion to pan; cook 5 minutes or until tender, stirring occasionally. Stir in tomato paste; cook 1 minute, stirring frequently. Stir in broth and beer, scraping pan to loosen browned bits. Return meat to pan. Stir in remaining 1/2 teaspoon salt, raisins, caraway seeds, and pepper; bring to a boil. Cover, reduce heat, and simmer 1 hour, stirring occasionally. Uncover and bring to a boil. Cook 50 minutes, stirring occasionally. Add carrot, parsnip, and turnip. Cover, reduce heat to low, and simmer 30 minutes, stirring occasionally. Uncover and bring to a boil; cook 10 minutes or until vegetables are tender. Sprinkle with parsley.

I added some russet potatoe and sweet potatoe also.

I am so sorry.  That was supposed to say mix the marshmallows with 2 tbsp of milk and then microwave.

I went the easy way for the meatballs at the Roundup.  There is a great recipe in the Better Homes and Gardens cookbook if you want to make it from scratch.  Here is my easy Pod recipe:
 
SWEET SOUR MEATBALLS
 
2 packages of frozen precooked meatballs (got mine at Walmart)
1 large can of chunk Pineapple (with juice)
1 green pepper (cut into small pieces)
2 bottles of Kikoman sweet sour sauce
 
Combine all ingredients in Slow Cooker (large one).
Cook on high for 2 hours. Then turn heat to low for one hour.
 
NOTE:  I prefer the regular meatballs instead of the Italian ones. When my kids were little, I also included sliced carrots.  They liked to eat the "wheels".  It was a good way to get them to eat veggies.

I'll get the pot roast details.  It is made in a crockpot with some soup, but don't remember the specifics.
