This is how I mounted my generator using a hitch mount and rack from Harbor Freight...pics attached....

Looks great!  Is the generator quiet?  Does that size generator give you the ability to run the a/c and lighting?

Be careful of the extra tongue weight.  Those generators aren't light and will probably add 60 to 75 pounds

I would be REALLY careful with this kind of setup.   Use of one of those dual hitch adapters reduces your the tongue weight capacity of your hitch by at least 50% (its a torque issue much like the bike rack problems), and that is before you added the weight of your generator to the equation.   And from the looks of things you are more then double the length of your ball<-->hitch distance so it might be even more then a 50% reduction.  So with the rack+generator+trailer you are going to be really over stressing a class 3 hitch.
 
There are a few dual hitch adapters out there that don't reduce your tongue weight capacity, but those are dual hitch adapters that have the ball mount built in so they don't extend your ball mount out more then a standard one.   The Curt D210 is an example of one of these mounts.
