I have never heard of a service person saying not to use a stabilizer.. the only "downside" would be less work for him. I also have a ton of 2-stroke fun, and use a very high quality pre-mix that includes a stabilizer. For a couple vehicles, power equipment, generator, and my tractor, I use a stabilizer called PRI-G. It's the best thing since sliced bread. Had a buddy that had 200 gallons of gas go bad in the tank. Nothing would run on it. I gave him a bottle of PRI-G, he dumped it in, let it sit for a couple days. When he then started using that fuel again, it ran everything fine. Now, when ever he gets his bulk tanks filled, gas or diesel, he uses the appropriate stabilizerPRI-G or -D. Not as esy to find as Sta-Bil, but I think it works better.

Maybe it's just the brand Stabil he didn't like. He did like Seafoam but I don't know if that is a stabilizer. What does a stabilizer do? It won't gum things up? Or is ethanol what does that, if it sits up?

Ethanol fuel doesn't have much of a shelf life and is water absorbent. I have used STABIL and SEAFOAM both work fine. The interweb has more info than I can attest too. I do recommend stabilizers for 2 cycle stuff.
