I'll start this thread off with my recipes from the round up.

Apple Crisp:  Dutch oven or convection oven
3 lbs. apples, 2 tbs. lemon juice, 1/2 c. lt. brown sugar (packed), 1/2 tsp. cinnamon, 1/2 tsp. nutmeg
Peel, core, and slice apples.  Toss in a bowl with lemon juice.  Mix brown sugar, cinnamon, and nutmeg together then mix into apples.  Place apples in 10-in.  Dutch oven or baking dish.

Topping:  1 c. brown sugar, 1/2 c. butter, 1 tsp. cinnamon, 3/4 c. flour, 3/4 c. oats
Mix butter, brown sugar, and cinnamon until smooth.  Add flour and then oats.  Mix well.  spoon over apple mixture.
Dutch oven:  Bake at 350 degrees for 30 minutes:  remove lid for last 15 minutes
Convection oven:  Bake at 325 degrees for 20-25 minutes.

Autumn Fruit Salad
Topping:  1-1/2 c. sugar, 1/2 c. flour, dash salt, 1-1/2 c. water, 1 tsp. butter or margarine, 1 tsp. vanilla, 1/4 tsp. nutmeg, 1 c. chopped walnuts
In a sauce pan, combine sugar, flour, and salt.  Add water.  Bring to a boil.  Cook and stir until mixture thickens.  Remove from heat and stir in butter, vanilla, nutmeg, and nuts.  Cool to room temperature or overnight in refrigerator. 

6 c. cubed unpeeled apples, 2 c. halved red seedless grapes, 1 c.  diced celery
In large bowl, combine apples, grapes, and celery.  Add dressing and toss gently.  Refrigerate until serving.

Pizza Rolls
1 loaf frozen bread dough, 1 jar pizza sauce, mozzarella cheese, pepperoni, thin slice ham cut into pieces about the size of the pepperoni.
Put the loaf frozen bread dough in greased bread pan.  Wipe small amount of oil on top of loaf and cover with a towel for 7-8 hours.  Once dough has risen, put on flat surface to roll out.  If making pizza rolls for a snack, roll the dough into a long, narrow rectangle.   Spread the pizza sauce over the dough, sprinkle on mozzarella cheese, add pepperoni and ham.  Roll so you have a long, thin roll.  Cut into pieces and arrange them on a cookie sheet or in a baking dish.  (You can also place them in a 12-in Dutch oven and bake 25-30 min. at 350 degrees.)  In convection oven, bake at 325 degrees for 20-25 minutes.  You may warm some pizza sauce for dipping.   (You can make them as an entree by rolling the dough into a square and making larger and fewer rolls)

CARROT BREAD
¾ cup oil

1 cup sugar

2 eggs

1-1/2 cups flour

1 tsp cinnamon

1 tsp nutmeg

1 tsp baking soda

1 tsp baking powder

½ tsp salt

1-1/2 cup carrots (canned or fresh grated carrots)

 

Mix well first 3 ingredients.

Add dry ingredients. 

Add carrots.

 

Spray a bread loaf pan with Pam.   Add batter.  Bake 350 degree oven for about 45 minutes or until a knife inserted comes out clean.

CONEY SAUCE
 
2 pounds ground beef

1-1/2 cups water

¼ cup chopped onion

4 oz can tomato sauce

3 cloves garlic, minced

1/2 TBS salt

1-1/2 to 2 TBS cumin

2 to 4 TBS chili powder

 

Ground chuck may be browned to remove excess fat before placing in crock pot.  If using a lean ground beef you can place it in the crock pot without precooking and this method gives the meat the fine texture which is ideal for the coney sauce.

 

Put all ingredients in crock pot; stir thoroughly to mix spices.  Stir occasionally to loosen the meat as it cooks.  Cover and cook on Low for 6-10 hours.

 

Use Koegel's viennas or any natural casing hotdogs available in your area. Top with generous amount of coney sauce, chopped onions, and mustard.   This sauce is also good over Mexican red beans, in taco shells, nachos, or as a Tostitos Scoops dip.

Taco Salad
Head of lettuce – washed and patted dry
1 can of dark red kidney beans - drained
1 cup Shredded cheddar cheese
l lb. ground meat – cooked and chilled
½ cup onion (the amount is really up to your taste)
1 tomato
Fritos – add after mixing with sauce
 
Sauce:  1 cup miracle whip, ½ cup ketchup, 6 TB taco sauce
 
You may add other taco ingredients like green pepper, olives or whatever you like or have in the frig at the time. Mix all together and add the sauce just before serving.
 
Pumpkin Dessert
 
Crust:                          1 box yellow cake mix (save out 1 cup)
                        1 stick oleo
                        1 egg
Mix and put in 13 x 9 pan, lightly greased.  Bake 10 minutes at 400 degrees.  Remove and reduce oven to 350 degrees.
Filling:             1 large can pumpkin
                        3 eggs
                        1 TB cinnamon
                        2/3 C Carnation evaporated milk
                        ¾ C sugar
Mix and put on top of the crust
Topping:          1 C cake mix
                        ¼ C sugar
                        ½ Cup chopped walnuts
                        ½ tsp. cinnamon
                        2 TB melted oleo
Mix and sprinkle on top. Bake 50 minutes at 350 degrees.  Cool Whip for topping.

Deb Lee's recipe- Mexican Sausage dip:

2-8oz. Packages of cream cheese
1-16oz. sour cream
1-1lb. ground sausage (whatever flavor you prefer)
1-16oz. salsa(mild,medium or hot- I used medium)

brown sausage and drain
melt cream cheese in pan on stove
add sour cream and heat through
combine sausage,cream cheese and sour cream in large bowl. Blend in salsa ( I use about 5/8ths of the jar)

Put in crock-pot and keep warm for dipping.
Makes a great left-over.

Mary's Peanut Butter Fudge
4-1/2 Cup Sugar
1/4 tsp Salt
12 oz. Can Carnation Evaporated Milk
18 oz. Crunchy Peanut Butter
1/2 Stick Butter
2 Tbs. Vanilla
1/2 Cup Marshmallow Creame
 
Mix sugar, salt and milk.  Boil on medium heat, stirring constantly until it forms a soft ball stage.  Mixture scorches easily.  Remove from heat and add peanut butter, marshmallow cream and vanilla.  Beat until mixture thickens and pour intoa a 9 x 13 buttered pan.

SHORTCUT SHORTCAKE

9x13 pan
1 box Twinkies
1 lg box Instant Vanilla Pudding or fresh fruit
8 oz Cool Whip
nuts or fresh fruit-optional
 
Split Twinkies length wise.  Place in pan with creme side up.
Mix milk with Pudding until it begins to thicken.
Spread Pudding over Twinkies.
Spread Pie Filling over Pudding.
Spread Cool Whip over Pie Filling.
Garnish with nuts or fresh fruit (Optional)
 
Cake is easier to cut if placed in fridge for a time.

Lil Cocktail Smokies
 
1 pkg. cocktail smokies
1 jar chili sauce
1 jar grape jelly
 
Mix chili sauce and jelly together in small crock pot
Add cocktail smokies
Cook for 2-3 hours to let flavors mix together

MARINATED BROCCOLI
Cut flowers off two heads of broccoli and stir in one packet of Good Seasons Italian dressing mixed up according to directions. Refrigerate 1-3 hours. (Cannot cheat and use bottled dressing. It doesn't work.)
 
CLAM DIP
2 cans minced clams and juice
2 T lemon juice
1 stick butter
Oregano
Minced onion
3/4 cup flavored bread crumbs
1 tsp tabasco sauce
Paprika
Chopped parsley
American and parmesan cheese
 
Simmer clams and lemon juice 15 mins. Add butter, oregano, onion and parsley. Simmer. Add tabasco. Simmer. Add bread crumbs until consistency of oatmeal. (Better less bread crumbs than too much.) Place in baking dish. Arrange cheese and sprinkle with paprika. Bake 350 for 30 mins.
 
(That's as the recipe was given to me. It's not as bad as it sounds. I don't know what all that simmering is about. I use about a tsp of oregano and about 2 tbsp of minced onion. Have never used the American cheese and didn't have parsley or paprika at the round-up. Used the juice of 1/2 lemon. Cooked for 20 mins in convection oven.)
 
GERMAN POTATO SALAD
8 medium red potatoes cooked and sliced
6-8 slices of bacon
1 medium onion chopped
1/3 cup white vinegar
2 tbsp sugar
2 tbsp water
Salt and pepper
 
Mix water, sugar and vinegar. Cook bacon till crispy. Saute onion in bacon fat till golden. Add vinegar mixture and bring to boil. Crumble bacon. Gently stir in potatoes and bacon till heated through. Season to taste.
