Black Bean & Veggie Fajitas

Just tried an awesome new recipe for black bean & veggie fajitas on a charcoal grill.  Before we left, I cut up red pepper, onion, and zucchini into strips and put in a baggie.  Also opened a can of black beans, rinsed, and put in plastic container.  At the campground, I put a little olive oil, salt and pepper in the baggie with the veggies and mushed around to get it on all of them, then poured them out onto a grill topper on a hot grill.  Got everything nice and cooked.  Put the black beans in foil, added cilantro, salt and pepper, and tomatillo salsa.  Sealed the foil and heated it on the grill.  When all was done on the grill, I put flour tortillas on the still hot grill, and they puffed up and got a little browned.  To assemble, I put on grated cheese, veggies, cilantro, black beans, and salsa, folded up the bottom a bit then the sides, and ate!  It was better than expected, and I'll definitely make it again!
 
We try to eat healthy and are vegetarians (but eat fish), so if anyone has any ideas or other recipes, I'd love to hear them!

Had not been on here in awhile & low & behold I found your recipe today!!! Tongue I am vegatarian too & will try this!! Sounds yummy & easy to fix! Thanks for sharing
