Ok all you R-Podders out there and you know who you are, what are your favourite snacks to MAKE while camping?

Yeah, I know all about the potato chips, freeze dried ice cream and GORP etc but we have microwave/convection ovens in our pods and if any of us are lucky a good campfire. You know, sometimes the ingredients taste better put together with a few twigs, dirt and bugs Big smile

My favourite snack food is high-fibre taco chips, with some black olives, green onions, tomatoes, tossed on and a quick sprinkle of cheese served with salsa and LF sour cream (which helps nicely for the potato portion of a steak dinner)  Can also be done in foil on a pan over the fire.

Microwave popcorn, ahh but not the kind in a bag, hopefully the microwave popcorn bowl that I use in my house microwave will work in the trailer one.

Rice crispies, marshmallows, butter/margarine, big bowl, patience and viola nummy and warm.

Anyone else?

I made cinnamon rolls in the dutch oven.  They were great.   Frozen bread dough and brown sugar/cream and cinnamon.   Now I am hungry.

I bought a $20 ice cream maker and now Ted says I have to make ice cream every weekend...I had one small  bowl and Ted had the restShocked..
 
I might have to add some peaches to the next batch...that's my favorite!

Fresh wild blueberry cobbler done in a dutch oven or a camp oven that coleman makes. Once even made a blueberry pie over a campfire in that little oven. Makes me want to be camping right now!!!

I'm guessing one of the balls that you toss around til its frozen. I haven't tried one yet but I have seen it done. It can make any flavor you want. and you can get one almost anywhere

The Ice Cream maker is one that requires the cylinder be placed in a Freezer.
Our current RV has a large freezer, much larger than the Pods.
It worked out great for us. My family use to use the electric w/ice
type and they worked great too. Just have to keep an eye on them.

We have one like that. We use ours to make frozen Margaritas Wink.

I can see where this is all going you people all want those desserts you never have when you're at home Clap

Okay Steve, sounds like a very fine idea to me and hey apparently it will do ice cream too hehehe!

gmandual, yeah remind me when you come up our way I'll be sure to drop by I'll even bring fresh Saskatoons for the cobbler just for a change. My dad used to use a dehydrator for his cherries and peaches they were very tasty, don't think he ever did jerky but other people I know did.

and Brin thanks for the ingredients, I suppose you'd have to buy the frozen buns or you'd have to wait til a loaf thawed.

Heide I get the idea that maybe for a quick dessert you could bring frozen and just bake it within a few days and voila a very fine snack indeed.

I've seen those little ovens, I'll have to see how motivated I am when dry camping but they look kind of neat. We saw a very expensive one in Costco although it looked like you could do a turkey in it!

Hey Brin...I am liking the cinnamon rolls snacking...since the eastern round up and the great presentation on dutch oven cooking by Tink and Taberella, I have ordered a 12" and a 8" and they are on the way.  I have been busy getting recipes off the internet but I surely would love to have that cinnamon roll recipe particulars.

Nellie,
Here is what I made.  I did use a frozen yeast roll that I allowed to rise.  I used a smaller dutch oven since there are only two of us and made four rolls.  I think it was an 8 inch size.  After the demonstration at ERU, I, too purchased a few sizes of dutch ovens and googled recipes.  These were very good and easy to make.     I may try making them in my oven at home in my oven dutch oven too one day.     I found that I really like pie irons too. 
I just spend the last 2 hours making smores cupcakes but I was at home.  I am trying to figure out why the baking bug hits me when it is 90 degrees outside.

Yeah, but when the baking bug hits heat doesn't matter LOL

We just had our inaugural voyage this past weekend and the best I could do while we were figuring out where to park, then leveling and the r-dome and so many other things that will get easier over time. I just just brought fresh fruit, but next time.....cinnamon buns it will be. I have a very large pot that could be a dutch oven that will do just fine

Cake in a Cup - five minutes to dessert!

I've tried this and it works.  Thought there may be someone who hasn't seen this recipe so here goes:

3 Tablespoons flour
3 Tablespoons sugar
2 Tablespoons cocoa
Pinch of salt
1 Egg
3 Tablespoons milk
3 Tablespoons oil
1/8 Teaspoon vanilla
1 Mug

Directions:
Spray the microwaveable mug with non-stick cooking spray.
Add flour, sugar, cocoa and salt. Whisk with a fork.
Add the egg and combine.
Stir in milk, oil and vanilla until well combined.
Cook in the microwave for 2 minutes and 30 seconds.  Test and if needed, cook for additional 30 seconds. Let cool for a few moments and then flip onto plate.
Repeat for your spouse, travel partner or friend.
Top with ice cream, berries or whipped cream.  Enjoy

Speaking of cast iron cookware  -- every time we drive north from Florida we pass the Lodge factory outlet in Tennessee.  Next time I think I'll buy the pie iron!  Loved the ones we saw at the round up last summer.  Good for the camp fire or in the fire place.  Yummy!
p.s. the Lodge outlet in South Pittsburgh Tn has a Cornbread Festival every year.  Check it out, it looks like fun!

I don't think I'd want bacon in my day pack but I do make some good jerky.  Two kinds so far, one with ground beef the other was chicken.  Both delicious.
I also use the dehydrator for fruits and veggies.  You can toss some dried veggies in the cookpot and make a nice soup or stew.  Put your seasonings in the baggie with the veggies, add water. 
Course in the luxury of our Pods you don't need dehydrated foods.

Found on the web what looks to be a good recipe for dutch oven cinnamon rolls (or a variant thereof):

Cinnamon Pecan Ring:
2 Loaves Bread Dough (frozen)
Melted Butter
1/4 c. Brown Sugar (packed)
1/4 c. Sugar
1/3 Tbsp. Cinnamon
1/3 c. Chopped Pecans
Pecan Halves

Cut each loaf of Bread dough into 4 pieces. Form each piece into a rope about 18” long. Brush each rope on all sides with melted butter. Stir together sugar, brown sugar, and cinnamon. Place mixture on aluminum foil. Roll rope in sugar mixture. Shape rope into a coil in the center of a 10” Dutch oven. Repeat with the next rope and continue the coil in the Dutch oven. When finished sprinkle the remaining sugar mixture and chopped pecans over the coil. Cover it and let rise 30-40 minutes. Bake in the oven at 350 degrees, or with top and bottom charcoal heat, for 30 minutes or until done.

Glaze:
2 1/2 c. Powdered Sugar
1 tsp. Vanilla
2 1/2 Tbsp. Milk

Stir ingredients together. If the glaze is too thick add milk a little at a time until it reaches the desired thickness.

After the Cinnamon Pecan Ring is finished baking, cool it about 15 minutes then spoon the glaze over it. Decorate with pecans.

When it's cold we do a lot of fondue-type dishes around the fire or at the picnic table.  

Banana Foster: one person makes the sauce over the fire while another butters and roasts a banana over the fire.  Then the roasted banana is put on a board, sliced up and passed around along with the freshly made sauce that everyone dips into.  Ditto for cheese fondue with steak, chicken and veggie kabobs.

If you have the type of fire pit where a grate can be put across it, lodge has a nice 1 qt pot that is perfect for cooking and warming sauces over the fire.  If a larger variety is wanted, their cast iron muffin pan can keep several premade sauces warm over the fire too.  Just keep those pots moving and stir occasionally to prevent scorching.

When it's hot outside, we have our compact snow cone machine for snow cones and slushies. We make the ice pucks at home and put them in a ziplock in the pod- freezer.   The syrups we keep in the fridge or cooler.

Think granola bars, multi-grain chips, wheat crackers or fruit and cereal bars. These snacks will last long, while boating or backpacking. Fruit such as apples, bananas, and oranges make a great pick-me-up on any trek. Also, string cheese, puddings, peanut butter, and yogurts are popular, when hiking.
